This gluten-free berry crumble is not only simple but also low-carb, dairy-free, and vegan—perfectly serving four people.

Cooking Time: 24 minutes

Fat: 15g

Ingredients:

For the Base:

  • 3 cups (300g) almond meal
  • 1 cup (100g) gluten-free oats
  • ½ tsp. cinnamon
  • 1/3 cup (80ml) melted coconut oil
  • 1/3 cup (80ml) maple syrup
  • 1 tsp. vanilla essence

For the Filling:

  • 2 cups (225g) blackberries
  • 1 tbsp. maple syrup
  • 1 tbsp. chia seeds

Instructions:

  1. Preheat your oven to 360°F (180°C) and line an 8-inch baking dish with parchment paper.
  2. In a large bowl, combine all the base ingredients. Press approximately ¾ of this mixture into the bottom of the prepared baking dish. Bake for 12 minutes or until golden brown.
  3. While the base is baking, prepare the blackberry filling by blending all filling ingredients in a high-speed blender until smooth.
  4. Transfer the mixture to a small saucepan and let it simmer on low heat for about 10 minutes until it thickens.
  5. Spread the blackberry filling over the base and top it with the remaining crumble mixture. Bake for an additional 12 minutes or until the top is golden.
  6. Once done, allow it to cool completely on a wire rack before slicing into bars.
